They are currently seeking a Full Time Sous Chef to join their kitchen brigade.
The hotel offers multi food outlets with the opportunity of fine dining restaurant that opens for lunch and dinner service or the bar / brassiere that serves food from breakfast to dinner giving fantastic views whilst the guest enjoys their drinks and food.

Key Features of the Role:
As the Sous Chef you are second in hierarchy after Head Chef, which means this position has full control over the kitchen and is directly responsible for the food quality produced, under the supervision of the Head Chef.
You will be expected to make sure the brigade is producing top-quality cuisine and that Chefs with talent are trained and developed. In addition, you’ll have to take charge of the kitchen in the Head Chef’s absence.
Your responsibilities will be diversified and vary from cooking or plating certain dishes to establishing the menu and dealing with the ingredient providers. Therefore, the position requires both culinary and managerial skills.
All food is prepared in-house using fresh ingredients and local suppliers wherever possible as well creating and developing and setting the highest standards of food quality and consistency.
Knowledge and Skills Required:
Be an accomplished Sous Chef
Ideally have previous 4 or 5 star hotel experience
Experience of working in top end dining preferable at a rosette level would be advantageous as well as volume banqueting.
Have the confidence to be able to recruit and train new team members of the kitchen and strive to be the best at what they do
Pay great attention to detail around food specification and cooking methods
Understand the importance of food margin control and has the skills to achieve it.
Able to motivate and train junior members of the team
Able to support the Head Chef and manage the kitchen in their absence
Able to adhere to company standards and procedures and can achieve financial and management targets
Have a good working knowledge of HACCP and COSHH
Have a Level 2 certification in Food Hygiene
